Peanut Stuffed Chicken Breast instructions:
Remove the bone from the chicken breasts by not damaging the meat. After that, pull off Gobbets and shreds. Mix the following well (honey, peanut butter, mint and cumin) all together in a bowl. Put it into the microwave for about 30 seconds. On each piece of meat spread about 2-3 teaspoon of the mixture (peanuts butter mixture you have just made).
Roll 1/12 of the gobbets and shreds together with the breast in order to make them into packets. Attached the packet and tie it with a toothpick. In the crock pot, arrange the 12 prepared packets into layers. Mix well water in the bowl with any peanut butter remaining.
Pour the packet of bouillon over the chicken packets. Cover the packets with additional water to about a depth of at least 1 inch put the crock pot on high for about 5 hour 30 minutes. Remove the packets (from the pot) and drain it on a platter.

~ 1 Spoon of Parmesan cheese

6 ounces bittersweet or semisweet chocolate, chopped
4 ounces white chocolate, chopped

Line baking sheet with parchment or waxed paper. In 1/2-quart saucepan on MELT on Wolf electric or induction cooktop, place bittersweet chocolate. Heat about 12 minutes or until chocolate is completely melted, stirring occasionally. Dip strawberries halfway into chocolate and place on waxed paper. Chill in Sub-Zero refrigerator about 30 minutes, or until chocolate is set. In 1/2-quart saucepan on MELT, place white chocolate and shortening. Melt until smooth. Drizzle white chocolate over dark chocolate-covered strawberries. Chill about 30 minutes or until set. Strawberries can be refrigerated up to 6 hours.
Makes 3 dozen strawberries.

1 (12 ounce) package semi-sweet chocolate chips
Half cup butter
1/3 cups water
1 egg yolk
1 tablespoon flavored liqueur (raspberry, orange, mint, kirsch, or Grand Marnier)
Three Fourth cup cocoa
*optional: add a little chile powder for some fun heat
PREPARATION
Pour water in the basin of a bain de marie . Heat to 140F (60C), covered with lid. In the porcelaine part, place chocolate chips, butter, water and liqueur. Place over water.
Heat about 10 minutes or until chocolate and butter is melted, stirring occasionally. Remove the porcelaine container of the bain de marie and gently whisk in egg yolk until just combined. Place pan in refrigerator for 1 hour or until firm. (Do not refrigerate overnight.)
When chilled, scoop chocolate by tablespoon and roll each into a ball. Roll balls into cocoa, chopped nuts, chcolate sprinkles, etc as you desire. Place balls on waxed paper lined baking sheet. Repeat until all mixture is used. Refrigerate until firm. Store in refrigerator.
Alternate method: In 2-quart saucepan onlow, place chips, butter and water. Heat about 20 minutes or until melted, stirring occasionally. Remove from heat. Gently whisk egg yolk and liqueur into mixture. Place pan in refrigerator for 1 hour. (Do not refrigerate overnight.) Continue as above.
Makes 3 dozen balls.

Coffee Harvesting: The Process
A coffee tree will produce its first full crop when it is about five years old. With the proper care and attention, it should produce consistently over the next 15 to 20 years. On average, most trees yield about 1 pound of coffee cherries annually.
At harvest time (this will vary depending on the region of the world the coffee is grown), the coffee trees are filled with coffee cherries. They will be ready for picking when they are bright red, glossy, and firm. An un-roasted coffee bean is basically the pit of the coffee cherry.
The coffee cherry has a skin that is very thick and has a slightly bitter flavor to it. The fruit under the skin is very sweet, having a texture very similar to that of a grape. Under the fruit layer is the parchment, which is covered by a thin, slippery, honey-like layer, called mucilage. This parchment serves as a sort of protective area. After removing the parchment, there are two translucent bluish-green coffee beans, which are coated with a thin layer called the silver skin. Most coffee cherries have two beans, but 5% to 10% of the time only one bean is produced. When a coffee cherry has only a single coffee bean, is called a peaberry.
The ripe cherries are harvested from the coffee tress by using one of the following methods: selective picking, stripping, or mechanical harvesting. Selective picking involves picking by hand only the ripe cherries from the tree and leaving behind the unripe beans to be harvested at a later time. On the other hand, stripping involves collecting the ripe and unripe cherries. The third method, mechanical harvesting, collects all the beans using a harvesting machine. The method used will depend on many factors, such as time, cost effectiveness, availability of workers, length of the harvest, difficulty of harvesting conditions, and availability of water.
After being harvested, the coffee beans must then be processed either by dry-process, wet-process, or the pulped natural method. In the dry-process, the coffee beans are allowed to dry while they are still in the cherry. This produces a coffee heavy in body - sweet, smooth and complex. A relatively new method is wet-processing. This process removes the four layers surrounding the coffee bean, which results in a coffee that is cleaner, brighter, and fruitier. The pulped natural method involves "pulping" a coffee bean, but emitting the fermentation stage to remove the silver skin. This method offers a coffee that is sweeter than wet-processed coffee, yet has an acidity of a wet-processed coffee. The pulped natural method can only be utilized in countries where the humidity is low.
Coffee is harvested during the dry season, which will vary from country to country and region to region. Coffee in Brazil, for example, can be harvested between March and October; however in Columbia it is harvested between October and February and then between April and June.

Unfortunately many Costa Rican coffee brands are not 100% pure regional coffee. The high quality Costa rican coffee was in short supply so high end retailors often mixed it with other coffees to raise both pprofits and taste levels. These retail brands should actually be called Costa Rica Coffee Blends but pass themselves off as the real thing. Many high end retail coffee chains use Costa Rican coffee as the main blend for their breakfast blends and house blends, some even use a blend for their "Costa Rican" coffee and mislabel them as estate coffee. So be sure your Costa Rican coffee is labeled Tarrazu or Tres Rios not just Costa Rican to be sure you are getting a pure estate coffee and not a blended gourmet coffee.
This winter 2008 is seeing record production in Costa Rican coffee production. Nows the time to try the best coffee in the world - Costa rica just happens to be having its best crop ever too. Start looking in December to reap the rewards of this excellent crop. Its got a great flavor and very smooth this year with a huge harvest it should be easy to find.

This is due to the tendon becoming too short for flat shoes. This can be repaired over time, but with continued use of heels, the problem is only likely to become worse.
The most common foot problems associated with high heels are blisters, corns and calluses. Calluses are generally overly thickened skin patches which can be unsightly. They are usually not harmful but they can cause infections. Blisters are extremely painful and they can take a while to heel. Some blisters are so painful that you cannot walk on them at all. These problems are generally caused by a lot of pressure and crowding of the toes. Most high heeled shoes have really thin soles which do not help the situation either.
A more painful problem which occurs only in women is neuroma. This is a condition which occurs when the feet are forced into really tight and narrow high heeled shoes. The shoes end up pinching a nerve and tissue then starts forming around the nerve which can cause severe pain. Usually this problem occurs in the third or fourth toes and in rarer cases it can affect the soles of the feet. Sometimes if the problem is so severe, surgery may be needed to treat it.
Another obvious problem that heels cause is balance. Boots and shoes with thin high heels, always pose a threat of a fall. If you turn slightly and suddenly, you could be caught off balance and the result could be a twisted ankle or worse.
Another problem which can occur is Haglunds Deformity which occurs in the back of the foot. Usually there is a bony enlargement on the back of the foot and it can become aggravated. This could cause the bump to become inflamed, red and painful.
Finally, hammertoe can occur which is basically the cause of the toes being pushed against the front of the shoe. This causes the toes to bend and curl at the middle joint of the toes.
There are so many problems associated with wearing high heeled shoes but women simply ignore the warnings for cosmetic reasons. You do not have to stop wearing heels permanently but you should limit your use of them to special occasions only. It really is not a joke and in order to take proper care of your feet, the use of high heels does need to be limited. Always check that the shoes are the right size for you as this is often what causes bigger problems. The shoes you do choose should also be comfortable when you try them on, though many women think that they can break the shoes in even if they are uncomfortable at first. This is never a good idea so be sure that they are comfortable right from the start!
Overall women will never stop wearing high heels, but in order to look after their feet, they should really only wear them for special occasions.

Making Wine From Grapes
In the ordinary way, recipes for wines made entirely from grapes are not a practicable proposition. This is because grapes are merely crushed and fermented without either sugar or water being added. Provided you have enough grapes, making wines from them is the simplest winemaking of all-that is, of course, provided they are fully ripe. Small unpruned bunches often contain a lot of small undeveloped fruits between the large juicy ones and these must be removed before the bunches are crushed. The whole bunches, stalk as well, are used as these add something to the wine. The yeast forming the bloom on your grapes may be the kind that will make excellent wine, but we cannot be sure of this owing to the near-certainty that wild yeast and bacteria are present with it. As we have seen in previous chapters, we must destroy these yeasts and bacteria and add yeasts of our choice to make the wine for us.
You will need at least twenty pounds of grapes to be assured of a gallon of wine-and this amount may not make one gallon of wine, though it make one gallon of strained 'must'. Therefore the more grapes you have the better.
If enough grapes are available, the process is as follows:
METHOD: Put all grapes in a suitable vessel and crush them, making sure each grape is crushed. Measure as near as you can or judge as accurately as possible the amount of pulp you have and to each gallon allow one Campden tablet or four grains of sodium metabisulphite. Dissolve this in an egg cupful of warm water and stir into the pulp and leave for twenty-four hours.
After this, give the mixture a thorough mixing and churning and then add the yeast. The mixture should then be left to ferment for five days.
Following this, the pulp should be strained through a strong coarse cloth to prevent bursting and wrung out as dry as you can. The liquor should then be put into jars and fermented the same ways as other wines.
A good plan when doing this is to mix a quart of water with grape pulp and to crush this well to get as much from the skins as you can. If you do this, you must add one pound of sugar and dissolve it by warming the juice just enough for this purpose. This thinner juice may be mixed with the rest but before the better quality juice is put into jars.
Where grapes only are used with water (as suggested above) it must be borne in mind that to get enough alcohol for a stable wine we must have between two and two and a half pounds of sugar to the gallon. Juice crushed from grapes rarely contains this much, therefore it would be wise to add one pound when the fruit is crushed and before the juice is put into jars. If the wine turns out dry, it may be sweetened.
We may use a hydrometer to find the sugar content so that we know how much to add to give the amount of alcohol we need, but this is not for beginners without previous experiences in this sort of thing. The better plan is to follow my suggestions above, and if the wine is dry to sweeten it and then preserve it with Campden tablets or metabisulphite.
Since the color comes from the skins, if we want a red wine from black grapes we ferment the skins as directed earlier in this chapter. A white wine from black grapes is made by crushing the grapes and pressing out the juice and fermenting the juice only. The difference in the process already described is that instead of fermenting the skin for five days, the juice is pressed out after it has been allowed to soak for twenty-four hours.
If you happen to be making some of the fruit wine such as elderberry, plum, blackberry or damson, at the same time as making grape wine, it would be a good idea to put the strained fruit pulp which would otherwise be discarded into the 'must' of the other fruit and let it ferment there.
